Simple Recipe: Traditional Aloo Tama (Potato and Bamboo Shoot Curry)
Ingredients:
200g fermented bamboo shoots (tama), rinsed
3 medium potatoes, cubed
1 cup black-eyed peas, soaked overnight
2 tomatoes, chopped
1 onion, sliced
2 cloves garlic, minced
1 tsp turmeric powder
1 tsp timur (Sichuan pepper)
2 dried red chillies
3 tbsp vegetable oil
Salt to taste
Method:
Heat oil in a pot and add timur, dried chillies, and garlic. Sauté until fragrant.
Add onions and cook until softened, then add tomatoes and turmeric.
Add the bamboo shoots, potatoes, and black-eyed peas with enough water to cover.
Simmer for 30-40 minutes until everything is tender, and the flavours meld together.
Season with salt and serve hot with steamed rice.
